Serves 4
Two medium fresh tomatoes, diced
6 to 8 cherry or pear tomatoes, halved
8 ounces of fusilli or rigatoni pasta
1/2 tablespoon extra-virgin olive oil
2 tablespoons butter
Three cloves of garlic, minced
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
2 tablespoons fancy grated Parmesan
8 ounces of your favorite EDDY sausage, cut into 1/2 pieces.
Preheat the oven to 375°. Prepare the pasta according to the directions on the package. Make sure to use a little salt in the water. In a small sauce pan, heat the butter on medium until slightly brown. Add the garlic and let cook till slightly brown, may only take 10-15 seconds. Add the diced and cherry tomatoes and let cook for 6-7 minutes until it starts to form a thin sauce. Stir in your EDDY sausage and let cook for another few minutes until the sausage is warmed through. Stir in the basil and let cook for another minute or two.
Toss the drained pasta and your sauce together. Pour into an oven safe dish or skillet and top with cheese and olive oil and bake for 10-12 minutes or until the cheese is melted. Sprinkle a little bit of parsley on top right before serving for garnish.
